Preheat oven to 450
Stir the flour baking powder and salt thoroughly. Cut in shortening
till mixture resembles coarse crumbs. Make a well in the dry mixture; add
milk all at once. Stir just till dough clings together. Knead gently on
lightly foured surface 10-12 strokes. Roll or pat dough to 1/2 inch thickness.
Cut with a 2 1/2-inch biscuit cutter, dip cutter in flour between cuts.
Place on ungreased baking sheet. Bake 10-12 minutes until golden.
Since it's spring and strawberries are coming into season, here's
the way to make easy homemade shortcake. Just use the biscuit recipe and
add 2 Tablespoons sugar to the dry ingredients and increase the shortening
to 1/2 cup. When done split the shortcakes in half, spoon fresh sliced
strawberries on bottom piece, and top with a dollop of whipped cream. Put
the lid back on and add a few more strawberries.
